Fructosylamino acid oxidase (FAOD, EC1.5.3.X) belongs to the class of oxidoreductases, whichusefructose amino acidas a substrate for specifically catalyzed theoxidativedecomposition of fructoseamino acids, toproduce hydrogenperoxide, glucose, aldehydes, ketonesand the correspondingamino acids. FAODalso belongs toD-amino acid oxidase family which uses FAD as a coenzyme.FAD binding domain consists of 4 α-helices and 2β-folding, and its catalytic activity hassubstratespecificity.
